A delightful, no-bake treat perfect for any occasion, these Strawberry Cheesecake Bites combine the creamy richness of cheesecake with the sweet flavor of strawberries, all wrapped up in a bite-sized package. Ideal for parties, these bites are easy to make and even easier to enjoy!


Ingredients

  • 4 tbsp Strawberry Fruit Spread
  • 8 oz softened Cream Cheese
  • 1 tbsp Sugar
  • ½ tsp Lemon Juice
  • 1 cup Cool Whip
  • ¾ cup Graham Cracker Crumbs

Instructions

  1. Prepare Baking Sheet: Line a baking sheet or pan with parchment paper.
  2. Mix Cream Cheese: In a mixing bowl, cream together the cream cheese, sugar, and lemon juice until smooth.
  3. Add Strawberry Flavor: Add the strawberry fruit spread to the cream cheese mixture and stir until well combined.
  4. Fold in Cool Whip: Gently fold in the Cool Whip until the mixture is smooth and uniform.
  5. Freeze Mixture: Place the mixture in the freezer for 2 hours to firm up.
  6. Form Bites: Scoop out tablespoon-sized portions of the mixture and roll them into balls. Roll each ball in the graham cracker crumbs to coat evenly.
  7. Coat and Freeze: Place the coated balls on the prepared baking sheet. If the mixture becomes too soft to handle, return it to the freezer for 10 minutes to set up again.
  8. Final Freeze: Once all the balls are formed and coated, place them in the freezer until they are completely frozen.
  9. Serve: Before serving, remove the bites from the freezer and let them sit at room temperature for 10-15 minutes.
