Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 2 teaspoons grated lemon zest
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 375°F and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the lemon juice, lemon zest, and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  9. Dust the cooled cookies with powdered sugar before serving for a sweet finishing touch
