These Funfetti Sugar Cookies are soft, buttery, and packed with colorful rainbow sprinkles in every bite. Also known as sprinkle cookies, they have that classic sugar cookie flavor with a festive twist. Best of all, they’re ready in about 30 minutes, making them perfect for birthdays, holidays, bake sales, or just because you’re craving something sweet and cheerful.
Ingredients
- 3 cups (360g) all-purpose flour
- ½ teaspoon cornstarch
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup rainbow jimmie sprinkles
- 1 cup (226g) unsalted butter, room temperature
- 1 ½ cups (297g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ⅛ teaspoon almond extract
For Rolling
- ¼ cup granulated sugar
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with silicone mats or parchment paper.
- In a small bowl, whisk together flour, cornstarch, baking soda, salt, and sprinkles. Set aside.
- In a large mixing bowl, beat butter and sugar with an electric mixer for 1 minute, until light and fluffy.
- Add egg, vanilla extract, and almond extract. Beat for 30 seconds until combined.
- Gradually mix in the dry ingredients on low speed or fold in by hand with a spatula.
- Place ¼ cup sugar in a small bowl for rolling.
- Use a cookie scoop to form dough balls. Roll each ball in sugar.
- Place cookies 2 inches apart on prepared baking sheets.
- Bake for 12–14 minutes, until edges are set and centers look slightly soft.
- Cool on the baking sheet for 15 minutes before serving.
