Description

These Funfetti Sugar Cookies are soft, buttery, and packed with colorful rainbow sprinkles in every bite. Also known as sprinkle cookies, they have that classic sugar cookie flavor with a festive twist. Best of all, they’re ready in about 30 minutes, making them perfect for birthdays, holidays, bake sales, or just because you’re craving something sweet and cheerful.


Ingredients

  • 3 cups (360g) all-purpose flour
  • ½ teaspoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup rainbow jimmie sprinkles
  • 1 cup (226g) unsalted butter, room temperature
  • 1 ½ cups (297g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon almond extract

For Rolling

  • ¼ cup granulated sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with silicone mats or parchment paper.
  2. In a small bowl, whisk together flour, cornstarch, baking soda, salt, and sprinkles. Set aside.
  3. In a large mixing bowl, beat butter and sugar with an electric mixer for 1 minute, until light and fluffy.
  4. Add egg, vanilla extract, and almond extract. Beat for 30 seconds until combined.
  5. Gradually mix in the dry ingredients on low speed or fold in by hand with a spatula.
  6. Place ¼ cup sugar in a small bowl for rolling.
  7. Use a cookie scoop to form dough balls. Roll each ball in sugar.
  8. Place cookies 2 inches apart on prepared baking sheets.
  9. Bake for 12–14 minutes, until edges are set and centers look slightly soft.
  10. Cool on the baking sheet for 15 minutes before serving.

  • Serve warm or at room temperature with milk, coffee, or hot cocoa

  • Store in an airtight container at room temperature for up to 5 days
  • Refrigerate dough for up to 48 hours before baking
