Ingredients

  • 2 teaspoons light corn syrup
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Double Boiler:
    • In the top of a double boiler, combine granulated sugar, cold water, egg whites, light corn syrup, cream of tartar, and a pinch of salt.
  2. Initial Mixing:
    • Beat the mixture with an electric mixer on low speed for 30 seconds to combine.
  3. Heat Over Simmering Water:
    • Set the double boiler over simmering water (water should not touch the bottom of the top pan). Continue beating at high speed for about 7 minutes, or until the mixture forms stiff, glossy peaks. Use a digital thermometer to ensure the mixture reaches at least 161°F (71.7°C).
  4. Final Touch:
    • Remove the mixture from heat, add vanilla extract, and beat for another 1 to 2 minutes until well combined and fluffy.
  5. Serve Immediately:
    • Use the Seven-Minute Frosting right away as it sets quickly once prepared.
