These Sausage Stuffed Mushrooms are a delightful appetizer or side dish, featuring savory sweet Italian sausage, creamy cheese, and aromatic garlic. Perfectly seasoned and baked to golden perfection, these mushrooms are sure to be a hit at your next gathering.


Ingredients

  • 2 tbsp olive oil
  • 16 oz mushrooms (baby bella or white)
  • 12 oz sweet Italian sausage (removed from casing)
  • 6 oz cream cheese
  • 3 garlic cloves, pressed
  • 2 tbsp minced parsley
  • ½ cup shredded Mozzarella cheese
  • Salt, to taste
  • Fresh cracked black pepper, to taste
  • ¼ cup shredded Mozzarella cheese (for topping)
  • 1 tbsp minced parsley (for topping)

Instructions

Preheat the oven

Preheat the oven to 350°F.

2. Prepare the mushrooms

Wash the mushrooms and carefully remove the stems. Toss the mushroom caps lightly in olive oil and set aside. (Save the stems.)

3. Cook the sausage

Preheat a medium cooking pan over medium heat, add a little oil, and cook the sausage, breaking it apart as much as possible.

4. Add the mushroom stems

Dice the mushroom stems and add them to the sausage about halfway through cooking. Cook until the sausage is done.

5. Mix the filling

In a mixing bowl, combine the cooked sausage, cream cheese, pressed garlic, parsley, salt, pepper, and ½ cup of shredded Mozzarella cheese. Mix until evenly incorporated.

6. Stuff the mushrooms

Stuff each mushroom cap with some of the filling, pressing it in gently and adding enough to create a dome on top.

7. Prepare for baking

Place the stuffed mushroom caps in a lightly greased baking dish.

8. Add the toppings

Sprinkle a little more cheese and parsley on top and bake for 20-22 minutes. (The time will vary slightly depending on the size of the mushrooms by 2-4 minutes.)

9. Serve and enjoy
