SALMON IN ROASTED PEPPER SAUCE

Salmon in Roasted Pepper Sauce is a restaurant-quality dish that you can easily prepare at home. With perfectly seared salmon fillets, a rich, creamy sauce infused with the sweetness of roasted red peppers, and the freshness of baby spinach, this recipe promises to deliver incredible flavors in every bite. Ingredients

  • 2 salmon fillets (skin on, about 1 lb.)
  • Salt and pepper for seasoning
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 3 cloves garlic, finely diced
  • 4 oz. roasted red peppers, diced
  • 4 cups fresh baby spinach
  • 1/2 cup Half & Half or heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp. red pepper flakes (adjust to taste)
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

 


Instructions

1. Prepare the Salmon: Season the salmon fillets with salt and pepper to enhance their natural flavor.
2. Sear the Salmon: Heat olive oil in a non-stick skillet over medium heat. Cook the salmon fillets flesh-side down first for 5 minutes on each side or until done to your preference. Once cooked, remove the salmon from the pan and set aside.
3. Sauté Garlic and Roasted Peppers: In the same pan, melt the butter and sauté the diced garlic for 1 minute. Add the roasted red peppers and cook for an additional 2 minutes to release their sweetness.
4. Wilt the Spinach: Toss in the fresh baby spinach and let it wilt gently in the pan.
5. Make the Creamy Sauce: Reduce the heat to low and add the Half & Half or heavy cream, grated Parmesan cheese, red pepper flakes, parsley, salt, and pepper. Stir the mixture and let it simmer for a few minutes.
6. Combine the Salmon and Sauce: Return the salmon fillets to the pan and spoon the creamy sauce over them, allowing the flavors to meld together.
7. Serve: Plate the salmon and serve it with pasta, rice, or steamed vegetables for a complete meal.
