Ingredients
- 2 salmon fillets (skin on, about 1 lb.)
- Salt and pepper for seasoning
- 1 tbsp. olive oil
- 1 tbsp. butter
- 3 cloves garlic, finely diced
- 4 oz. roasted red peppers, diced
- 4 cups fresh baby spinach
- 1/2 cup Half & Half or heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 tsp. red pepper flakes (adjust to taste)
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions
1. Prepare the Salmon: Season the salmon fillets with salt and pepper to enhance their natural flavor.
2. Sear the Salmon: Heat olive oil in a non-stick skillet over medium heat. Cook the salmon fillets flesh-side down first for 5 minutes on each side or until done to your preference. Once cooked, remove the salmon from the pan and set aside.
3. Sauté Garlic and Roasted Peppers: In the same pan, melt the butter and sauté the diced garlic for 1 minute. Add the roasted red peppers and cook for an additional 2 minutes to release their sweetness.
4. Wilt the Spinach: Toss in the fresh baby spinach and let it wilt gently in the pan.
5. Make the Creamy Sauce: Reduce the heat to low and add the Half & Half or heavy cream, grated Parmesan cheese, red pepper flakes, parsley, salt, and pepper. Stir the mixture and let it simmer for a few minutes.
6. Combine the Salmon and Sauce: Return the salmon fillets to the pan and spoon the creamy sauce over them, allowing the flavors to meld together.
7. Serve: Plate the salmon and serve it with pasta, rice, or steamed vegetables for a complete meal.
Notes
Serving Suggestions
- Serve the salmon over freshly cooked pasta, like linguine or fettuccine, to soak up the creamy roasted pepper sauce.
- Pair it with fluffy jasmine rice, quinoa, or mashed potatoes for a hearty meal.
- For a lighter option, enjoy the salmon with steamed vegetables like asparagus, green beans, or roasted zucchini.
- Garnish with extra parsley or grated Parmesan cheese for a finishing touch of freshness and flavor.
Storage Tips
- Refrigeration: Store leftover salmon in an airtight container in the refrigerator for up to 2 days. Make sure the dish is cooled completely before sealing the container.
- Freezing: While freezing is not recommended for creamy sauces, you can freeze the cooked salmon separately. To reheat, thaw it in the fridge overnight and reheat gently on the stovetop.
- Reheating: When reheating, warm the salmon and sauce on low heat in a skillet, stirring occasionally to maintain the sauce’s creamy texture. Avoid microwaving to prevent overcooking the salmon.
