Roasted Brown Butter Honey Garlic Carrots are tender, flavorful, and perfectly caramelized. Ingredients

  • 2 pounds large carrots, peeled and cut into 2-inch pieces
  • 1/2 cup butter
  • 3 tablespoons honey
  • 2 garlic cloves, chopped
  • Salt and pepper, to taste
  • Parsley, chopped for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a medium saucepan, melt the butter over medium-high heat until it becomes foamy and turns golden brown with a nutty aroma.
  3. Remove from heat and stir in honey and chopped garlic.
  4. Peel and cut carrots into 2-inch pieces, then toss them in the honey garlic butter sauce until evenly coated.
  5. Spread carrots on a baking sheet in a single layer. Season with salt and pepper.
  6. Cover with foil and bake for 10 minutes. Remove foil and bake another 5–10 minutes, until the carrots are tender and caramelized.
  7. Transfer to a serving dish, garnish with fresh parsley, and serve warm.

Notes

  • Serving: These carrots are best served warm, straight from the oven. They make a perfect companion for roasted chicken, grilled steak, turkey, or baked salmon. For added flair, drizzle a little extra brown butter sauce on top before serving.
  • Make Ahead: You can peel and cut the carrots a day ahead, then store them in the refrigerator until ready to use. The sauce can also be made in advance and reheated just before tossing.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat in the oven at 350°F for 10 minutes or warm on the stovetop over medium heat until heated through. Avoid microwaving to keep the texture crisp.
  • Freezing: Not recommended, as freezing changes the texture of roasted carrots.
