Description

Pizza Enchiladas combine the best of two beloved dishes—pizza and enchiladas—into one delicious, cheesy casserole. This comforting recipe features seasoned ground beef, onions, and plenty of melted cheese wrapped in tortillas and smothered in pizza sauce. It’s an ideal meal for family dinners or game day gatherings, offering bold flavors that everyone will love.


Ingredients

  • 1 lb lean ground beef

  • 1 cup diced yellow onion

  • 810 flour or corn tortillas

  • 2 cups shredded mozzarella cheese

  • 1 ½ cups pizza sauce (plus extra for topping)


Instructions

  • Preheat oven to 375°F (190°C).

  • In a large skillet, cook ground beef and diced onion over medium heat until beef is browned and onions are soft. Drain excess fat.

  • Warm tortillas slightly to make them easier to roll.

  • Spread about 2 tablespoons of pizza sauce on each tortilla.

  • Spoon a generous amount of the beef and onion mixture onto each tortilla.

  • Sprinkle shredded mozzarella cheese over the filling.

  • Roll up the tortillas tightly and place them seam side down in a greased baking dish.

  • Pour remaining pizza sauce evenly over the rolled tortillas.

  • Sprinkle additional shredded cheese on top.

  • Bake uncovered for 20-25 minutes or until the cheese is melted and bubbly.

 

  • Remove from oven and let cool for a few minutes before serving.

Notes

erve Pizza Enchiladas hot, garnished with sour cream, sliced jalapeños, or fresh chopped cilantro for extra flavor. They pair well with a simple green salad or steamed vegetables.

To store, let the enchiladas cool completely, then transfer leftovers to an airtight container. Refrigerate for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through or use a microwave for quicker reheating.

 

For longer storage, freeze the enchiladas before baking by wrapping the dish tightly with foil and plastic wrap. They can be frozen for up to 2 months. When ready to eat, thaw overnight in the fridge and bake as directed.
