Ingredients
- 2 cups all-purpose flour
- ⅓ cup sugar
- 1 cup salted butter, softened
- 1 package (8 oz / 250 g) cream cheese, softened
- 1 cup powdered sugar
- 1 box Pistachio instant pudding mix (4-serving size)
- ¾ cup milk
- ¼ cup pistachios, roughly chopped
Instructions
- Preheat the oven to 300ºF (150ºC).
- In a large mixing bowl, combine the flour and sugar.
- Beat in the softened butter on medium speed with an electric mixer until fully blended.
- Press the dough evenly into a 13×9-inch baking pan to form the crust.
- Bake for 30–35 minutes or until the edges are golden brown. Remove from the oven and let cool.
- In another large mixing bowl, beat the cream cheese and powdered sugar on medium speed until smooth.
- Add the milk and pistachio pudding mix, continuing to beat until fully combined.
- Spread the pistachio filling evenly over the cooled crust.
- Sprinkle the chopped pistachios on top.
- Refrigerate for at least 1 hour or until set.
- Slice into 24–36 bars depending on the desired portion size and serve chilled.
Notes
- Serve these bars chilled for the best texture and flavor.
- Store in an airtight container in the refrigerator for up to 5 days.
- For longer storage, freeze the bars in an airtight container for up to 2 months. Thaw in the fridge before serving.
