Ingredients

  • 3/4 cup pineapple juice
  • 1/3 cup coconut rum (Malibu Original recommended)
  • 1/2 cup lemon-lime soda
  • 1/8 cup fresh lime juice
  • 1/8 cup simple syrup
  • Garnish: fresh pineapple skewer and ice cubes

Instructions

  1. In a cocktail shaker or large mason jar with a lid, combine the pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Shake well to combine.
  2. Fill two 12 oz. low-ball cocktail glasses three-quarters full with ice cubes.
  3. Pour half of the cocktail mixture (approximately 1 cup each) over the ice in each glass.
  4. Garnish with a skewer of fresh pineapple pieces.

Notes

  • Leftover punch can be stored in the refrigerator for up to 24 hours, but ice will dilute the drink and the soda may become flat.
  • Do not add ice until serving to avoid a watered-down cocktail.
  • This recipe can easily be doubled or tripled depending on the number of guests.
  • Lemon-lime soda can be swapped with ginger ale or lemon-lime sparkling water.
  • Coconut rum can be substituted with white, clear, or spiced rum if desired.
