If you love the cheesy, savory taste of pepperoni pizza but want a fast, easy meal, pepperoni pizza quesadillas are the perfect solution. This recipe combines crispy tortillas with melted cheese, spicy pepperoni, and a hint of onion to deliver all the flavor of pizza in a handheld form. Ready in just minutes, these quesadillas make a great snack, lunch, or casual dinner that everyone will enjoy.


Ingredients

1 tsp olive oil or butter
¼ cup yellow onion, diced
½ cup sliced pepperoni
1 cup shredded mozzarella cheese
2 large flour tortillas
¼ cup pizza sauce for dipping


Instructions

  • Heat a skillet over medium heat and add olive oil or butter.

  • Sauté diced onion until translucent, then remove and set aside.

  • Place one flour tortilla in the skillet.

  • Sprinkle half of the shredded mozzarella cheese evenly over the tortilla.

  • Add the sautéed onions and sliced pepperoni on top of the cheese.

  • Sprinkle the remaining mozzarella cheese over the pepperoni and onions.

  • Cover with the second tortilla.

  • Cook for 2-3 minutes until the bottom tortilla is golden brown and the cheese begins to melt.

  • Carefully flip the quesadilla and cook the other side until golden brown and cheese is fully melted.

  • Remove from skillet and let cool slightly before slicing into wedges.

 

  • Serve warm with pizza sauce for dipping.

Serve the pepperoni pizza quesadillas immediately while they are hot and crispy to enjoy the best texture and flavor. They pair perfectly with a side of fresh salad or your favorite dipping sauces like pizza sauce, ranch, or marinara. If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. To reheat, warm them in a skillet or oven to restore their crispiness—avoid using a microwave, as it can make the tortillas soggy. For longer storage, you can freeze cooked quesadillas wrapped tightly in foil or plastic wrap and reheat them directly from frozen in the oven.
