Ingredients
For the bars:
- 1 cup butter, room temperature
- 3/4 cup light brown sugar
- 3/4 cup granulated sugar
- 1 cup creamy peanut butter
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 cups old fashioned oats
- 1 tsp baking powder
- 1/2 tsp salt
For the topping:
- 12 oz milk chocolate chips
- 1 cup creamy peanut butter
Instructions
- Preheat oven to 350º F.
- Using an electric mixer, cream together butter, light brown sugar, granulated sugar, and peanut butter until light and fluffy.
- Add eggs and vanilla extract; mix until fully combined.
- Gradually add flour, oats, baking powder, and salt; mix until just combined.
- Press mixture into a 13×9 inch baking pan evenly.
- Bake for 20-25 minutes, until edges are golden and center is set.
- Remove from oven and allow bars to cool slightly.
- For the topping, place chocolate chips and peanut butter in a microwave-safe bowl. Heat for 60 seconds and stir until fully melted.
- Pour topping over bars and spread evenly.
- Let the chocolate set before slicing and serving.
