Ingredients

  • 4 medium yellow potatoes, scrubbed (not peeled)
  • 3 tablespoons olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ½ teaspoon salt, or to taste
  • 4 tablespoons shredded Parmesan cheese, divided


Instructions

  1. Preheat your oven to 450°F (232°C) and line a rimmed baking sheet with parchment paper.
  2. Using a mandoline or a sharp knife, slice the potatoes into ¼-inch thick rounds.
  3. In a large mixing bowl, combine the potato slices with olive oil, garlic powder, onion powder, pepper, parsley, salt, and 2 tablespoons of Parmesan cheese. Toss until evenly coated.
  4. Arrange the slices in a single layer on the prepared baking sheet. Avoid overlapping for even cooking.
  5. Bake for 20–25 minutes, flipping the slices halfway through, until they are golden and crisp.
  6. Sprinkle the remaining Parmesan cheese over the potatoes and bake for an additional 3 minutes, or until the cheese melts and turns lightly golden.
  7. Remove from the oven and serve hot with your favorite dipping sauce.
