  • Author: IBA

Description

If you’re looking for a comforting dessert that brings a taste of nostalgia, this Old-Fashioned Rice Pudding is a must-try. With its creamy texture, subtle spice, and sweet raisins, this classic recipe is both simple and satisfying. Whether you’re enjoying it as a warm treat on a chilly day or a cool dessert in the summer, this rice pudding is sure to become a family favorite.

Ingredients

  • 2/3 cup Minute Rice
  • 2 3/4 cups milk
  • 1/3 cup sugar
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg
  • Cinnamon (for garnish)
  • 1/2 cup raisins

Instructions

First Step:
In a buttered 1-quart baking dish, combine the Minute Rice, milk, raisins, sugar, butter, salt, vanilla extract, and nutmeg. Mix well to ensure that all the ingredients are evenly distributed.

Second Step:
Bake in a preheated oven at 350°F (175°C) for 1 hour. Stir the pudding after 15 minutes, and then again when it’s finished baking. This helps to ensure that the pudding cooks evenly and prevents it from sticking to the sides of the dish.

Third Step:
Once baked, sprinkle the top with cinnamon to add a warm, aromatic touch.

Finally Step:
Serve the rice pudding warm or chilled. It will continue to thicken as it stands, giving it a rich and creamy consistency that’s perfect for any occasion.

Notes

Serving Tips

  1. Serving Temperature: Rice pudding can be served warm or chilled, depending on your preference. If serving warm, let it cool slightly after baking. If serving cold, refrigerate for at least a couple of hours before serving.
  2. Garnishes: Enhance the flavor with a sprinkle of cinnamon or nutmeg on top. You can also add a dollop of whipped cream or a drizzle of honey for extra sweetness.
  3. Portioning: Serve in small bowls or cups as this dessert is rich and creamy. Garnishing each serving with a few extra raisins or a sprinkle of additional spices can make it visually appealing.
  4. Accompaniments: Pair the rice pudding with fresh fruit, like berries or sliced apples, for a refreshing contrast. A cup of coffee or tea complements this dessert beautifully.

Storage Tips

  1. Refrigeration:
    • Cool Before Storing: Allow the rice pudding to cool to room temperature before storing it in the refrigerator.
    • Store: Transfer the pudding to an airtight container. It will keep in the refrigerator for up to 4-5 days. The pudding will thicken further as it sits, so you may need to stir in a little milk to reach your desired consistency when serving.
  2. Freezing:
    • Cool Completely: Ensure the pudding is completely cooled before freezing.
    • Freeze: Place the rice pudding in a freezer-safe container. It can be frozen for up to 2-3 months. To prevent ice crystals, cover the container tightly with plastic wrap or foil before sealing with the lid.
    • Thawing: Thaw frozen pudding in the refrigerator overnight. Reheat gently on the stovetop over low heat, adding a splash of milk if needed to restore its creamy texture.
  3. Reheating:
    • Stovetop: Reheat the pudding in a saucepan over low heat, stirring frequently. Add a bit of milk to loosen the pudding if it has become too thick.
    • Microwave: Microwave in short intervals, stirring in between, until warmed through. Add milk as needed to reach your preferred consistency.

By following these serving and storage tips, you can enjoy your Old-Fashioned Rice Pudding at its best, whether you’re serving it immediately or saving it for later.
