Description

The No-Bake Pineapple Lush Dessert is a light, creamy, and refreshing treat that’s perfect for any occasion. Made with a buttery graham cracker crust, a silky pineapple cream cheese layer, and a fluffy Cool Whip topping, this tropical-inspired dessert requires no oven time and minimal effort. With just 15 minutes of prep and a handful of simple ingredients, it’s an ideal make-ahead recipe for summer gatherings, holidays, or anytime you crave something sweet yet effortless. The hardest part is waiting for it to chill, but the result is worth every minute — smooth, fruity, and irresistibly delicious!

Ingredients

  • 16 whole sheets honey Graham crackers
  • 1/2 cup (1 stick) butter, melted
  • 8-ounce brick cream cheese, softened
  • 20-ounce can crushed pineapple, undrained
  • 1 cup powdered sugar
  • 3.4-ounce box vanilla instant pudding (just the powder)
  • 8-ounce tub Cool Whip topping, thawed
  • 1/2 cup lightly toasted coconut flakes

Instructions

  1. Coat a 9×13-inch baking dish with nonstick spray.
  2. Blend the Graham crackers in a food processor until finely ground (about 2 1/2 cups of crumbs).
  3. Add the melted butter and blend until the mixture is moist and combined.
  4. Press the crumb mixture evenly into the bottom of the prepared pan to form a firm crust.
  5. In a large bowl, beat the softened cream cheese with an electric mixer until light and fluffy.
  6. Add the crushed pineapple (including its juices), powdered sugar, and pudding powder to the cream cheese. Beat until smooth and slightly thickened.
  7. Spread the pineapple cream mixture evenly over the graham cracker crust.
  8. Spread the Cool Whip topping evenly over the pineapple layer.
  9. Refrigerate overnight or at least 4 hours until completely set and chilled.
  10. Before serving, sprinkle toasted coconut on top, slice into squares, and enjoy.

Notes

    • Chilling Time: Allow the dessert to chill for at least 8 hours (or overnight) for the best flavor and texture.
    • Serving: Serve cold, directly from the refrigerator, for a refreshing treat.
    • Toppings: Add extra whipped topping, crushed pineapple, or toasted coconut before serving for added presentation.
    • Portions: Slice into small squares — this dessert is rich and satisfying, so smaller servings go a long way.
    • Storage: Store leftovers covered in the refrigerator for up to 4 days.
    • Freezing: You can freeze it for up to 2 months. Thaw overnight in the fridge before serving.
    • Make-Ahead: Perfect to make a day in advance for parties or gatherings — the flavors meld beautifully overnight.
    • Transporting: Keep it chilled in a cooler or insulated bag if taking to an event.
