No Bake Cookies are the ultimate solution when you need a quick, delicious dessert without turning on the oven. These cookies are rich, chocolatey, and perfectly chewy with the nutty flavor of peanut butter and the hearty texture of oats. They are a favorite for busy weeknights, last-minute guests, or simple family treats. With just a few pantry staples, you can whip up a batch in under an hour, making them an excellent go-to recipe for any occasion.


Ingredients

  • 2 cups granulated sugar
  • ½ cup butter
  • ½ cup milk
  • ½ cup unsweetened cocoa powder
  • ½ cup peanut butter
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon salt
  • 3 cups quick oats

Instructions

  1. Prepare two baking sheets by lining them with parchment paper and set aside.
  2. In a medium saucepan, combine the sugar, butter, milk, and cocoa powder. Bring the mixture to a rolling boil over medium heat. Once it reaches a steady boil, continue boiling for 1 minute.
  3. Remove the pan from heat and whisk in the peanut butter, vanilla extract, and salt until smooth.
  4. Stir in the quick oats until fully combined.
  5. Using a spoon or cookie scoop, drop portions of the oat mixture onto the prepared baking sheets.
  6. Place the baking sheets in the refrigerator for at least 30 minutes or until the cookies are fully set.

Notes

No Bake Cookies are best served chilled for a perfectly chewy texture. Once they’ve set, transfer them into an airtight container. You can keep them at room temperature for up to 3 days, but refrigeration is recommended to keep them firm and fresh for up to 1 week. If you’d like to make them in advance, they also freeze beautifully. Place the cookies on a baking sheet in a single layer, freeze until solid, then transfer them to a freezer-safe bag or container. They will last for up to 3 months in the freezer. To serve, simply thaw them at room temperature for 10–15 minutes.
