With a simple Oreo cookie crust, a luscious peanut butter cheesecake filling, and a decadent chocolate ganache topping, these bars are guaranteed to be a hit with friends and family alike.

Ingredients

For the crust:

  • 2 cups chocolate graham cracker crumbs
  • 1/2 cup unsalted butter, melted

For the filling:

  • 16 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping, plus more for garnish

For the topping:

  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons peanut butter
  • Whole peanuts for garnish

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. In a bowl, combine the chocolate graham cracker crumbs with the melted butter until well mixed. Press the mixture firmly into the bottom of the prepared dish to form the crust. Place it in the refrigerator to chill while you prepare the filling.
  3. In a large bowl, beat together the softened cream cheese, creamy peanut butter, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped topping until fully incorporated.
  4. Spread the filling evenly over the chilled crust in the baking dish. Return it to the refrigerator to chill while you make the topping.
  5. For the topping, melt the semi-sweet chocolate chips and peanut butter together until smooth and glossy. Spread this chocolate ganache over the chilled filling layer.
  6. Refrigerate the bars for at least 4 hours, or until set and firm.
  7. Before serving, garnish with additional whipped topping and whole peanuts. Use the parchment paper to lift the bars out of the dish and cut them into squares.

Notes

  1. Serving Suggestions:
    • For a stunning presentation, cut the chilled bars into squares using a sharp knife.
    • Serve chilled for the best texture and flavor. The creamy cheesecake filling paired with the crunchy crust and chocolate ganache is simply irresistible.
  2. Garnish with Flair:
    • Before serving, top each bar with a dollop of whipped topping and a whole peanut for an extra touch of elegance and flavor.
    • For added visual appeal, drizzle some additional melted chocolate over the bars just before serving.
  3. Accompaniments:
    • Pair these decadent bars with a scoop of vanilla ice cream or a glass of cold milk for the ultimate indulgence.
    • Fresh berries, such as strawberries or raspberries, make a delightful accompaniment, adding a burst of freshness to complement the rich flavors.
  4. Storage Tips:
    • Store any leftover bars in an airtight container in the refrigerator for up to 3-4 days.
    • To maintain their freshness and prevent the chocolate ganache from melting, store the bars on a flat surface in a single layer, separating each layer with parchment paper.
  5. Freezing Instructions:
    • These bars can also be frozen for longer-term storage. Wrap individual bars tightly in plastic wrap and then aluminum foil before placing them in a freezer-safe container.
    • To thaw, transfer the bars to the refrigerator overnight and allow them to thaw slowly for best results. Avoid thawing at room temperature to prevent condensation and potential texture changes.
  6. Refreshing Leftovers:
    • If the bars become slightly soft or lose their shape after storage, simply pop them back into the refrigerator for a brief chill before serving. This will help them regain their firmness and shape.

By following these serving and storage tips, you can ensure that your No-Bake Buckeye Cheesecake Bars remain irresistibly delicious from the first bite to the last, whether you’re enjoying them freshly made or as a delightful treat from the freezer.
