Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 jalapenos, seeded and diced
  • 12 egg roll wrappers
  • 1/2 cup cooked bacon bits
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions

1. Prepare Filling:

  • In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapenos, cooked bacon bits, garlic powder, onion powder, salt, and black pepper. Mix until well combined to create the flavorful filling.

2. Assemble Egg Rolls:

  • Lay an egg roll wrapper on a clean surface. Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner over the filling, fold in the sides, and roll up tightly. Wet the top corner with a little water to seal the egg roll. Repeat with the remaining wrappers and filling.

3. Fry Egg Rolls:

  • Heat about 2 inches of vegetable oil in a large skillet over medium heat. Once the oil is hot, fry the egg rolls in batches, turning occasionally, until they are golden brown and crispy, which usually takes about 3-4 minutes per batch.

4. Serve:

  • Once fried, remove the egg rolls with a slotted spoon and drain them on paper towels to remove excess oil. Serve the Mini Jalapeno Popper Egg Rolls hot with your favorite dipping sauce, such as ranch dressing, sweet chili sauce, or sriracha mayo.

Notes

Serving Suggestions:

  1. Dipping Sauce Variety: Offer a selection of dipping sauces such as ranch dressing, salsa, sour cream, or guacamole to cater to different tastes and preferences.
  2. Garnish with Fresh Herbs: Sprinkle chopped cilantro or green onions over the egg rolls before serving for a burst of freshness and color.
  3. Serve with Sliced Lime: Accompany the egg rolls with wedges of lime for squeezing over the rolls to add a zesty citrus flavor.

Storage Tips:

  1. Refrigeration: Store any leftover Mini Jalapeno Popper Egg Rolls in an airtight container in the refrigerator for up to 2-3 days. Ensure they are cooled completely before storing.
  2. Reheating: To reheat the egg rolls, preheat the oven to 350°F (175°C) and place them on a baking sheet. Bake for 10-15 minutes or until heated through and crispy.
  3. Freezing: If you want to freeze the egg rolls for longer storage, place them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to a freezer bag or container. Reheat from frozen in the oven at 350°F (175°C) for 15-20 minutes, or until heated through.

Additional Tips:

  1. Avoid Microwave Reheating: While it’s possible to reheat the egg rolls in the microwave, they may become soggy. Using the oven to reheat will help maintain their crispy texture.
  2. Make Ahead: You can assemble the egg rolls ahead of time and refrigerate them until ready to fry. This is especially convenient for party prep or busy weeknights.
  3. Customize Toppings: Get creative with toppings by adding sliced jalapenos, crumbled bacon, or a drizzle of hot sauce for an extra kick of flavor.
