Ingredients

For the chicken marinade:

4 boneless, skinless chicken breasts (or thighs)

2 tbsp olive oil

2 tbsp lemon juice

3 garlic cloves, minced

1 tsp dried oregano

1 tsp ground cumin

1 tsp paprika

Salt and pepper, to taste

For the rice:

1 cup long-grain rice (or basmati)

1 tbsp olive oil

1 small onion, chopped

2 garlic cloves, minced

1 ½ cups chicken broth (or water)

1 tsp ground cumin

1 tsp turmeric

Salt and pepper, to taste

For serving:

1 cucumber, diced

1 cup cherry tomatoes, halved

½ cup Kalamata olives, pitted and sliced

Feta cheese, crumbled (optional)

Fresh parsley or cilantro, chopped

Lemon wedges for garnish


Instructions

In a bowl, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.

Coat the chicken with the marinade and let it sit for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

Cook the Chicken:

 

Heat a grill pan or skillet over medium-high heat.

Cook the chicken for 5-7 minutes on each side until fully cooked and golden brown.

Remove and let rest for 5 minutes before slicing.

Cook the Rice:

 

In a large skillet, heat olive oil over medium heat.

Sauté the chopped onion and garlic until soft and fragrant.

Add the rice and stir to coat it in the oil, cooking for 1-2 minutes.

Pour in the chicken broth (or water), cumin, turmeric, salt, and pepper.

Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and liquid is absorbed. Fluff with a fork.

Assemble the Dish:

 

In a serving bowl, layer the rice at the bottom.

Top with sliced chicken, diced cucumber, cherry tomatoes, olives, and crumbled feta cheese (if using).

Garnish with fresh parsley or cilantro and lemon wedges on the side.

Notes

You can also add a dollop of tzatziki or Greek yogurt for extra creaminess.

For extra veggies, sauté bell peppers or zucchini with the onions for the rice.
