Ingredients

  • 1 pound ground beef
  • 1 egg
  • 1 tablespoon mustard
  • 1/4 cup BBQ sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/8 cup onion, minced
  • 1/2 cup bread crumbs
  • 4 slices pepper jack cheese
  • 4 slices bread
  • Butter for grilling

Instructions

  1. Preheat the oven to 375Β°F.
  2. In a medium bowl, combine ground beef, egg, mustard, BBQ sauce, garlic powder, black pepper, and minced onion.
  3. Mix the ingredients until well combined.
  4. Add the bread crumbs and mix again until the mixture holds together.
  5. Shape the mixture into an oval loaf and place it in a 4Γ—8 baking pan.
  6. Spread a little additional BBQ sauce over the top of the loaf.
  7. Cover the pan with foil and bake for about 45 minutes or until the meatloaf is fully cooked.
  8. Remove the meatloaf from the oven and place it on a plate.
  9. Allow it to rest for about 20 minutes so it firms up and slices easily.
  10. Cut the meatloaf into slices about 3/4 inch thick.
  11. Butter one side of each slice of bread.
  12. Heat a large skillet over medium heat.
  13. Place one slice of bread buttered side down in the skillet.
  14. Add one slice of pepper jack cheese.
  15. Place slices of meatloaf on top of the cheese to cover the bread.
  16. Add another slice of cheese over the meatloaf.
  17. Place the second slice of bread on top with the buttered side facing up.
  18. Cook until the bottom bread becomes golden and crispy.
  19. Flip the sandwich carefully and cook the other side until golden brown and the cheese is melted.
  20. Remove from the pan, slice, and serve warm.
