Ingredients

  • 5 cups broccoli
  • 2 cups shredded chicken
  • 2 tablespoons butter
  • ½ onion, finely diced
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 cups cauliflower rice, thawed if frozen
  • 8 oz cream cheese
  • ¼ cup light cream
  • ¾ cup chicken broth
  • 2 cups sharp cheddar cheese, divided

Instructions

  1. Preheat oven to 375°F.
  2. Add 1 cup of water to the bottom of a large skillet with a lid. Add broccoli and bring to a simmer. Cook 4-5 minutes until tender-crisp. Drain and let cool.
  3. Cook onion, garlic, and Italian seasoning in butter until onion is tender.
  4. Stir in cream cheese and cook on medium heat until smooth.
  5. Add light cream and chicken broth, simmer 2 minutes. Remove from heat and stir in 1 ½ cups cheddar cheese.
  6. Combine chicken, broccoli, cauliflower rice, and sauce. Spread into a 9 x 13-inch baking dish.
  7. Top with remaining cheese and bake 20-25 minutes until heated through.

Notes
