Ingredients
- 5 cups broccoli
- 2 cups shredded chicken
- 2 tablespoons butter
- ½ onion, finely diced
- 1 clove garlic, minced
- 1 teaspoon Italian seasoning
- 2 cups cauliflower rice, thawed if frozen
- 8 oz cream cheese
- ¼ cup light cream
- ¾ cup chicken broth
- 2 cups sharp cheddar cheese, divided
Instructions
- Preheat oven to 375°F.
- Add 1 cup of water to the bottom of a large skillet with a lid. Add broccoli and bring to a simmer. Cook 4-5 minutes until tender-crisp. Drain and let cool.
- Cook onion, garlic, and Italian seasoning in butter until onion is tender.
- Stir in cream cheese and cook on medium heat until smooth.
- Add light cream and chicken broth, simmer 2 minutes. Remove from heat and stir in 1 ½ cups cheddar cheese.
- Combine chicken, broccoli, cauliflower rice, and sauce. Spread into a 9 x 13-inch baking dish.
- Top with remaining cheese and bake 20-25 minutes until heated through.
