Ingredients

  • 8 ounces linguine pasta
  • 2 tablespoons olive oil
  • 6 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 ¼ pounds large shrimp
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 cups baby spinach
  • ½ cup parmesan cheese
  • 2 tablespoons parsley, chopped
  • 1 tablespoon lemon juice


Instructions

  1. Cook linguine pasta in boiling water according to package directions. Drain and set aside.

  2. In the same pot, heat olive oil and 2 tablespoons of butter over medium heat.

  3. Add minced garlic and red pepper flakes; cook until fragrant.

  4. Add shrimp, season with salt and pepper, and cook until shrimp turn pink.

  5. Stir in Italian seasoning and baby spinach; cook until spinach wilts.

  6. Return pasta to the pot; add remaining butter, parmesan cheese, and chopped parsley. Stir until well combined and butter is melted.

  7. Add lemon juice and toss everything together.

  8. Serve immediately.
