Lasagna Cupcakes are the perfect way to enjoy classic lasagna without the hassle of slicing and serving a large pan. These individual-sized lasagna bites are loaded with layers of tender pasta, savory meat sauce, and creamy cheeses. Perfect for parties, meal prep, or just a fun dinner twist, they’re easy to make and guaranteed to please both kids and adults.
Ingredients
- 1/3 pound ground beef
- 1 cup marinara sauce
- 24 wonton wrappers
- 1 3/4 cups shredded mozzarella cheese, divided
- 3/4 cup ricotta cheese
- 1/2 cup grated Parmesan cheese (plus more for topping)
- Basil for garnish, optional
- Salt and pepper, to taste
- Cooking spray
Instructions
- Preheat oven to 375ºF and spray a muffin tin with cooking spray.
- Brown ground beef in a skillet and season with salt and pepper. Drain and let cool. Mix with marinara sauce and set aside.
- Reserve 3/4 cup mozzarella cheese for topping. In a separate bowl, mix the remaining 1 cup mozzarella, ricotta, and Parmesan cheese.
- Place one wonton wrapper into the bottom of each muffin cup.
- Divide ricotta mixture in half and spoon a portion over the wonton wrappers.
- Divide the meat mixture in half and layer it over the ricotta.
- Repeat with another wonton wrapper, ricotta, and meat sauce layer.
- Sprinkle reserved mozzarella evenly on top of each cupcake.
- Bake 15-20 minutes, until edges are golden brown.
- Let cool for 5 minutes. Loosen edges with a knife and remove cupcakes from the tin.
- Garnish with basil and extra Parmesan cheese if desired. Serve warm.
Notes
- Serve with a side salad or garlic bread for a complete meal.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven at 350ºF for 10 minutes or in the microwave for 1-2 minutes.
- Can be frozen before baking for up to 2 months; bake directly from frozen, adding 5-10 minutes to cook time.
