Description

Lasagna Cupcakes are the perfect way to enjoy classic lasagna without the hassle of slicing and serving a large pan. These individual-sized lasagna bites are loaded with layers of tender pasta, savory meat sauce, and creamy cheeses. Perfect for parties, meal prep, or just a fun dinner twist, they’re easy to make and guaranteed to please both kids and adults.


Ingredients

  • 1/3 pound ground beef
  • 1 cup marinara sauce
  • 24 wonton wrappers
  • 1 3/4 cups shredded mozzarella cheese, divided
  • 3/4 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese (plus more for topping)
  • Basil for garnish, optional
  • Salt and pepper, to taste
  • Cooking spray

Instructions

  1. Preheat oven to 375ºF and spray a muffin tin with cooking spray.
  2. Brown ground beef in a skillet and season with salt and pepper. Drain and let cool. Mix with marinara sauce and set aside.
  3. Reserve 3/4 cup mozzarella cheese for topping. In a separate bowl, mix the remaining 1 cup mozzarella, ricotta, and Parmesan cheese.
  4. Place one wonton wrapper into the bottom of each muffin cup.
  5. Divide ricotta mixture in half and spoon a portion over the wonton wrappers.
  6. Divide the meat mixture in half and layer it over the ricotta.
  7. Repeat with another wonton wrapper, ricotta, and meat sauce layer.
  8. Sprinkle reserved mozzarella evenly on top of each cupcake.
  9. Bake 15-20 minutes, until edges are golden brown.
  10. Let cool for 5 minutes. Loosen edges with a knife and remove cupcakes from the tin.
  11. Garnish with basil and extra Parmesan cheese if desired. Serve warm.

Notes

  • Serve with a side salad or garlic bread for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at 350ºF for 10 minutes or in the microwave for 1-2 minutes.
  • Can be frozen before baking for up to 2 months; bake directly from frozen, adding 5-10 minutes to cook time.
