Ingredients

  • 3 medium zucchini, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 120 grams cheddar cheese, shredded
  • 50 grams Parmesan cheese, grated
  • 100 grams breadcrumbs

Instructions

  1. Preheat the oven to 190°C and lightly grease a baking dish with olive oil or cooking spray.
  2. Place the zucchini slices in a bowl. Add garlic, olive oil, salt, and pepper, then toss to coat.
  3. Spread the zucchini evenly in the prepared baking dish.
  4. Sprinkle cheddar and Parmesan over the zucchini, then top with breadcrumbs.
  5. Bake for 25–30 minutes until the zucchini is tender and the topping is golden brown.
  6. Allow to cool slightly before serving.

Notes

This Irresistible Baked Zucchini Cheese is best served hot straight out of the oven when the cheese is bubbly and the breadcrumbs are golden brown. It makes an excellent side dish for roasted meats, pasta, or grilled seafood, and it can also stand alone as a lighter vegetarian main. If you’re serving it at a dinner party or potluck, prepare the casserole ahead of time and bake it just before guests arrive to enjoy its crispy topping. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For reheating, place the dish in the oven at 180°C (350°F) for about 10 minutes to keep the topping crunchy. Avoid microwaving as it may make the zucchini soggy. Freezing is not recommended due to the high water content in zucchini.
