Ingredients
- 12 ounces of chorizo
- 1 (12-ounce) bag of tortilla chips
- 1 can of black beans (rinsed and drained)
- 3/4 cup shredded sharp cheddar cheese
- 3/4 cup crumbled queso fresco
- 1 cup cherry tomatoes (halved)
- 1 jalapeño (sliced)
- 6 eggs
- 2 scallions (chopped)
- 1 avocado (sliced)
- 1/2 cup Dean’s DairyPure Light Sour Cream
- Salt and black pepper (to taste)
Instructions
- Preheat the Oven
Preheat your oven to 375°F. Coat a large baking sheet with cooking spray or line it with foil for easy cleanup. - Cook the Chorizo
In a hot skillet over medium-high heat, brown and crumble the chorizo for about 3 minutes. Once cooked, transfer it to a paper towel-lined plate to drain excess oils. - Assemble the Nachos
Spread tortilla chips in an even layer across the baking sheet. Top the chips with the chorizo crumbles, black beans, shredded cheddar cheese, crumbled queso fresco, halved cherry tomatoes, and sliced jalapeños. Crack the eggs and arrange them around the tray. - Bake the Nachos
Bake the nachos in the preheated oven for 17-20 minutes, or until the eggs are cooked to your desired doneness. - Finish and Serve
Remove the baking sheet from the oven and sprinkle the nachos with chopped scallions. Add slices of avocado and dollops of sour cream on top. Season the eggs with salt and black pepper to taste. Serve hot and enjoy!
Notes
Serving Tips:
- Garnish for Extra Flavor: Top the nachos with additional fresh garnishes like cilantro, lime wedges, or a drizzle of hot sauce for added flavor.
- Serve Immediately: For the best texture and taste, serve the nachos immediately after baking. The chips will remain crispy, and the eggs will be perfectly cooked.
- Pairing Suggestions: Huevos Rancheros Breakfast Nachos pair wonderfully with a refreshing fruit salad, a side of salsa, or even a chilled glass of orange juice.
Storage Tips:
- Storing Leftovers: If you have leftovers, store the nachos in an airtight container in the refrigerator for up to 2 days.
- Reheating: To reheat, place the nachos in a preheated oven at 350°F for 8-10 minutes to crisp up the chips and warm the eggs. You can also microwave them, but the chips may lose some of their crunch.
- Freezing: While not ideal, you can freeze the nachos (without sour cream and avocado) for up to 1 month. To reheat, bake from frozen at 350°F for 12-15 minutes or until hot.
