Ingredients

  • 2 large chicken breasts, split lengthwise, or 4 medium/small chicken breasts
  • 1 Tbsp olive oil
  • Kosher salt and black pepper
  • 3 Tbsp butter
  • 1 Tbsp chicken base (like Better Than Bouillon)
  • 4 Tbsp all-purpose flour
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 cups chicken stock
  • 1/2 cup water
  • 1/4 cup heavy cream (optional)
  • Instant Pot mashed potatoes for serving

Instructions

1. Prepare the Seasoning Mix
In a small bowl, combine the flour, onion powder, garlic powder, salt, and pepper. Set this mixture aside for later use.

2. Cook the Chicken Breasts
Lightly season the chicken breasts with kosher salt and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken for about 5 minutes per side until they reach an internal temperature of 165°F. Remove the cooked chicken and set it aside.

3. Create the Roux
Lower the heat to medium-low and melt butter in the skillet. Add the chicken base, stirring until it dissolves. Gradually sprinkle in the flour mixture, stirring constantly to form a roux. Cook for 30 seconds to 1 minute to eliminate the raw flour taste.

4. Make the Gravy
Slowly pour in the chicken stock while scraping the bottom of the skillet to deglaze. Add water and whisk until the mixture is smooth and begins to thicken. For an extra creamy texture, stir in heavy cream.

5. Combine Chicken with Gravy
Shred the cooked chicken (if desired) and return it to the skillet along with any collected juices. Let it simmer in the gravy for a few minutes, allowing the flavors to meld together.
