If you’re a fan of nutty, buttery cookies, then you’re in for a treat with these Homemade Pecan Sandies. These cookies are the perfect blend of crispiness and rich, nutty flavor, making them an ideal snack or dessert for any occasion. Follow this easy recipe to create your own batch of these delightful cookies at home.


Ingredients

  • 2 sticks butter, unsalted (1/2 lb., softened)
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup confectioner’s sugar (sifted)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour (500 gr.)
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon salt
  • 2 cups chopped pecans
  • 1/2 cup granulated sugar (for decoration)

Instructions

1. Preheat the Oven: Preheat your oven to 325 degrees F to ensure it’s at the right temperature when you’re ready to bake.

2. Cream the Butter and Sugars: In a large bowl, cream together the softened butter, vegetable oil, 1 cup granulated sugar, and confectioner’s sugar until the mixture is smooth and well combined.

3. Add the Eggs and Vanilla: Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract for a hint of flavor.

4. Combine Dry Ingredients: In a separate bowl, combine the flour, baking soda, cream of tartar, and salt. Gradually stir this dry mixture into the creamed mixture until fully blended. Mix in the chopped pecans for that signature nutty taste.

5. Roll and Coat the Dough: Roll the dough into 1-inch balls. Roll each ball in the remaining 1/2 cup of granulated sugar to coat them lightly.

6. Arrange and Bake: Place the sugar-coated dough balls 2 inches apart on ungreased cookie sheets. Bake in the preheated oven for 10 to 12 minutes or until the edges of the cookies are golden brown.

 

7. Cool the Cookies: Remove the cookies from the oven and transfer them to wire racks to cool completely. This will help them firm up and achieve the perfect texture.

  • Freezing: To enjoy the cookies later, freeze the baked cookies in a single layer on a baking sheet, then transfer them to a freezer-safe bag or container. They can be frozen for up to 3 months. Thaw at room temperature before serving.
