Ingredients
For the Brownies
- 1 cup granulated white sugar
- 1 cup brown sugar
- 2 teaspoons vanilla extract

- 2 large eggs
- 2 large egg yolks
- 8 tablespoons unsalted butter
- 8 ounces (225 grams) chocolate chips
- ½ cup vegetable oil
- 1 ¼ cups all-purpose flour
- ¼ cup unsweetened cocoa powder
For the Chocolate Ganache
- ½ cup heavy cream
- 1.5 cups chocolate chips

- ¼ cup rainbow chocolate chips
Instructions
- Preheat your oven to 350°F. Line a 9×13 inch baking dish with parchment paper and spray with nonstick cooking spray. Set aside.
- In a large mixing bowl, combine the granulated sugar, brown sugar, vanilla extract, salt, whole eggs, and egg yolks. Whisk until the mixture is well combined.
- In a microwave-safe bowl, add the butter and chocolate chips. Microwave for 30 seconds, stir, then repeat in 30-second intervals until melted and smooth.
- Stir in the vegetable oil to the melted chocolate mixture.
- Pour the melted chocolate mixture into the sugar mixture and whisk until fully combined.
- Gently fold in the all-purpose flour and cocoa powder until just incorporated—do not overmix.
- Pour the brownie batter into the prepared baking dish and spread it evenly. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
- While the brownies bake, prepare the ganache. Pour the heavy cream into a microwave-safe bowl and heat for about 1 minute, until hot but not boiling.
- Add the chocolate chips to the hot cream and let sit for 2 minutes. Then stir until smooth and glossy.
- Once the brownies are baked, pour the ganache over the top and spread evenly using an offset spatula.
- Immediately sprinkle the top with rainbow chocolate chips for that signature cosmic look.
- Allow the brownies to cool completely at room temperature before slicing.
