Ingredients

  • 1 Onion, chopped
  • ½ Red bell pepper, chopped
  • ½ Green bell pepper, chopped
  • ½ Yellow bell pepper, chopped
  • 2 tsp Minced garlic
  • ½ tsp Dried oregano
  • ½ tsp Dried basil
  • Salt and pepper, to taste
  • 1 Can diced tomatoes
  • 2 C Beef broth
  • C Rice
  • 1 ½ C Shredded cheddar cheese

Instructions

  1. Cook the Ground Beef and Vegetables:
    Add the ground beef, onion, and bell peppers to a skillet over medium-high heat. Cook until the vegetables are tender and the meat is browned. Drain any excess fat.
  2. Add Garlic and Spices:
    Stir in the minced garlic, oregano, basil, salt, and pepper. Sauté for an additional 30 seconds to release the flavors.
  3. Combine Tomatoes, Broth, and Rice:
    Add the diced tomatoes, beef broth, and rice to the skillet. Stir well to combine.
  4. Simmer the Mixture:
    Bring the mixture to a light boil. Reduce the heat to a simmer, cover, and cook for 20 minutes, or until the rice is tender and has absorbed the liquid.
