Ingredients

  • 3 ½ cups Fruity Pebbles Cereal
  • 3 cups mini marshmallows
  • 2 tablespoons unsalted butter
  • 16 oz cream cheese, softened
  • ¼ cup Powdered sugar
  • 1 tsp Vanilla
  • 7 oz tub marshmallow creme
  • 1 ½ cup cereal, lightly chopped

Instructions

  1. Prepare the Cereal Taco Shells:
    • In a large microwave-safe bowl, combine the Fruity Pebbles, mini marshmallows, and unsalted butter.
    • Microwave on high for 2-3 minutes until the marshmallows start to expand.
    • Quickly stir the mixture until all the cereal is evenly coated with the melted marshmallows and butter.
    • While still warm, spoon the mixture into taco shell molds or form small taco shapes by draping over a narrow rolling pin or the handle of a wooden spoon, suspended between two objects.
    • Allow to cool and set until firm, creating your cereal taco shells.
  2. Prepare the Cheesecake Filling:
    • In a large mixing bowl, blend the softened cream cheese with powdered sugar and vanilla until smooth.
    • Fold in the marshmallow creme and then gently mix in the additional chopped cereal for a bit of texture.
  3. Assemble the Cheesecake Tacos:
    • Carefully spoon or pipe the cheesecake filling into the cereal taco shells.
    • Chill in the refrigerator for at least 1 hour to firm up the filling before serving.
  4. Optional Garnish:
    • Optionally, garnish the tacos with extra Fruity Pebbles or sprinkles for a more festive look.
