Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1 1/2 cups chopped strawberries
  • 3 tsp sugar (for topping)
  • 1/2 tsp cinnamon (for topping)

Instructions

  1. Prepare the Batter:
    • In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and mix well until fully incorporated.
    • In a separate small bowl, sift together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Stir in the vanilla extract.
    • Gently fold in the chopped strawberries until evenly distributed.
  2. Prepare for Baking:
    • Preheat your oven to 400ºF (200ºC). Line a muffin tin with paper liners or lightly grease the muffin cups.
    • Spoon the batter into the prepared muffin pans, filling each cup about 2/3 full.
  3. Add the Topping:
    • In a small bowl, combine the 3 teaspoons of sugar and 1/2 teaspoon of cinnamon. Sprinkle this mixture evenly over the tops of the muffins.
  4. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
  5. Cool and Serve:
    • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.

Notes

Serving Tips:

  1. Serve Fresh: For the best taste and texture, enjoy these muffins fresh out of the oven or warmed slightly. They’re delicious on their own, but also pair well with a pat of butter or a dollop of jam.
  2. Perfect with Beverages: These muffins make a great companion to your morning coffee, tea, or a glass of milk. They also work well as a sweet treat alongside a bowl of fresh fruit or yogurt.
  3. Presentation: For an extra touch, serve the muffins on a pretty plate or in a basket lined with a cloth napkin. This simple presentation can make even a casual breakfast feel special.

Storage Tips:

  1. Room Temperature: Store muffins in an airtight container at room temperature for up to 3 days. This helps keep them fresh and prevents them from becoming stale.
  2. Refrigeration: If you prefer to keep them longer, you can store the muffins in the refrigerator. Place them in an airtight container or resealable bag to avoid them drying out. They will stay fresh for up to a week.
  3. Freezing: For longer storage, you can freeze the muffins. Place them in a freezer-safe bag or container, making sure they are well-sealed to prevent freezer burn. They can be frozen for up to 3 months. To enjoy, thaw at room temperature or warm in the oven at 350ºF (175ºC) for about 10 minutes.
  4. Reheating: If you’ve stored the muffins in the refrigerator or freezer, you can easily reheat them. For refrigerator-stored muffins, heat them in a preheated oven at 350ºF (175ºC) for about 5 minutes. For frozen muffins, thaw them at room temperature or warm them in the oven as mentioned above.
