Ingredients
- 3 cups ripe peaches, peeled and diced
- 1 tablespoon lemon juice
- 3 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 (1 3/4 ounce) box SURE-JELL fruit pectin
Instructions
- Place the diced peaches, sugar, lemon juice, and vanilla extract in a medium pot.
- Bring the mixture to a boil over medium heat, stirring constantly.
- Once boiling, reduce the heat slightly and cook for about 3 minutes while continuing to stir.
- Sprinkle in the fruit pectin, stirring until dissolved, and continue boiling for 1 minute.
- Lower the heat and stir for an additional minute to blend well.
- Transfer the mixture to a food processor and pulse until you reach your desired texture β smooth or chunky.
- Ladle the hot jam into clean canning jars, leaving a small space at the top for sealing.
- Let the jars cool for 1 hour without the lids.
- Seal the jars tightly, then allow them to rest at room temperature for 24 hours.
- Once set, refrigerate for up to 1 month or freeze for up to 1 year.
