Ingredients

  • 34 pounds chuck roast (or rump roast)
  • Salt and pepper to taste
  • 10 ½ ounces beef broth (low sodium)
  • 10 ½ ounces onion soup (low sodium)
  • 1 onion, sliced
  • 12 ounces light beer
  • 2 cloves garlic, minced
  • 1 sprig rosemary (optional)
  • 1 teaspoon Worcestershire sauce
  • 8 French rolls (or 2 baguettes cut into 6″ rolls)
  • 8 tablespoons butter

Instructions

  1. Prepare the Beef: Season the roast with salt and pepper, then brown it in a large pan over medium-high heat.
  2. Slow Cook the Beef: Transfer the browned roast to a slow cooker and add beef broth, onion soup, sliced onion, light beer, minced garlic, rosemary (if using), and Worcestershire sauce. Cook on low for 8 hours or on high for 4 hours until the beef is tender and easily shreds.
  3. Prepare the Rolls: Preheat your broiler. Butter the French rolls and place them under the broiler until lightly toasted.
  4. Assemble the Sandwiches: Slice or shred the tender beef. Pile it onto the toasted rolls, and serve with a side of jus from the slow cooker for dipping.

Notes

Serving Tips:

  1. Presentation: Arrange the French Dip Sandwiches on a platter alongside small bowls of the flavorful jus for dipping.
  2. Accompaniments: Serve with classic sides like coleslaw, potato chips, or a crisp green salad for a balanced meal.
  3. Garnish: Sprinkle freshly chopped parsley or a dash of paprika over the sandwiches for a vibrant touch before serving.
  4. Variations: Customize your sandwiches with melted cheese (such as provolone or Swiss) or sautéed mushrooms for added flavor and texture.

Storage Tips:

  1. Refrigeration: Store any leftover cooked beef and jus separately in airtight containers in the refrigerator for up to 3-4 days.
  2. Freezing: To freeze, wrap the cooked beef tightly in plastic wrap or foil, then place in a freezer-safe container or bag. Freeze for up to 2-3 months. Thaw overnight in the refrigerator before reheating.
  3. Reheating: Gently reheat the beef and jus on the stove over low heat or in the microwave, stirring occasionally until warmed through. Toast the rolls again under the broiler for a fresh, crispy texture.
  4. Preparation Ahead: Prepare the beef and jus ahead of time and store in the refrigerator, then assemble the sandwiches just before serving to maintain optimal taste and texture.
