Ingredients
- ½ cup Challenge Butter (1 stick)
- 1 cup all-purpose flour
- 2 cups granulated sugar, divided
- 1 tablespoon baking powder
- ⅛ teaspoon salt
- 1 cup milk
- 4 cups fresh peach slices
- 1 tablespoon fresh lemon juice
- Ground cinnamon (optional)
- Ice cream or whipped cream for serving (optional)
Instructions
- Preheat oven to 375°F.
- Place butter in a 13×9-inch baking dish and melt in the oven for about 5 minutes. Remove and set aside.
- In a large bowl, combine flour, 1 cup sugar, baking powder, and salt.
- Stir in milk until the dry ingredients are moistened.
- Pour batter over the melted butter in the baking dish without stirring.
- In a separate bowl, mix remaining 1 cup sugar with peach slices and lemon juice.
- Pour peach mixture over the batter without stirring. Sprinkle with cinnamon if desired.
- Bake for 40–45 minutes or until golden brown.
- Serve warm or at room temperature with ice cream or whipped cream if desired.
Notes
- Serve the cobbler warm for the best flavor, either on its own or with a scoop of vanilla ice cream or whipped cream.
- Room temperature serving works great for picnics and potlucks.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in the microwave for 20–30 seconds, or reheat the whole dish in a 350°F oven for about 10 minutes.
