Description

If you’re looking for a dessert that’s refreshingly tangy, irresistibly moist, and easy to make, this Easy Lime Cake is the perfect treat. With minimal prep time and a balance of sweet and zesty flavors, this lime-infused bundt cake is ideal for gatherings, celebrations, or simply satisfying a sweet tooth. Follow this step-by-step guide to create a delectable lime cake that will leave everyone asking for seconds.

Ingredients

For the Cake:

  • 1 standard size package white or vanilla cake mix
  • 1 cup lime yogurt or sour cream (avoid fat-free options for better texture)
  • ½ cup oil
  • 4 eggs
  • 1 tablespoon finely grated lime peel
  • 3 tablespoons lime juice

For the Glaze:

  • 2 cups powdered sugar (add more for a thicker glaze)
  • 3 tablespoons melted butter
  • 34 tablespoons lime juice
  • 12 tablespoons milk (adjust for desired glaze consistency)
  • Pinch of salt

Instructions

1. Prepare the Pan and Preheat the Oven
Start by preheating your oven to 350°F. Coat a 12-cup bundt pan or a 10-inch fluted tube pan with non-stick cooking spray, and dust it lightly with flour to ensure easy cake removal.

2. Mix the Cake Batter
In a large mixing bowl, combine the cake mix, lime yogurt or sour cream, oil, eggs, lime juice, and grated lime peel. Use an electric mixer to blend on low speed for 1 minute until the ingredients are moistened. Then, increase the speed to medium and beat for an additional 2 minutes to create a smooth batter. Spread the batter evenly in the prepared pan.

3. Bake the Cake
Place the pan in the preheated oven and bake for 40 to 44 minutes. The cake is done when a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

4. Prepare the Lime Glaze
In a large bowl, whisk together the powdered sugar, melted butter, lime juice, milk, and a pinch of salt. Adjust the milk or powdered sugar to achieve your desired glaze consistency.

5. Glaze the Cake
Once the cake has cooled, spoon the lime glaze evenly over the top. For an extra burst of flavor and visual appeal, garnish with additional grated lime peel if desired.
