Easter Poke Cake

  • Author: Lusine Svetlana

Description

This Easter Poke Cake is a delightful and colorful treat that’s perfect for spring celebrations. Featuring vibrant swirls of pastel colors, creamy white chocolate pudding, and fluffy whipped cream, this cake is as fun to make as it is to eat.

Ingredients

  • 1 box white cake mix
  • Ingredients listed on the box (eggs, water, oil)
  • 2 (3.3 oz.) boxes instant white chocolate pudding
  • 3 ½ cups milk
  • 2 cups heavy cream
  • ¼ cup powdered sugar (or more to taste)
  • 1 teaspoon vanilla extract
  • Food coloring (blue, green, pink, and yellow)

Instructions

  1. Preheat the oven to the temperature specified on the cake mix box. Grease a 9×13-inch baking dish with baking spray and set aside.
  2. Prepare the cake mix according to the directions on the box.
  3. Divide the batter into 4 equal portions and add a few drops of food coloring to each bowl, stirring well.
  4. Using a spoon, drop small portions of each colored batter into the prepared baking dish. Alternate the colors to create a pattern, working quickly as the batter will spread. Tap the baking dish on the counter to flatten the surface and use a toothpick to gently swirl the colors without over-mixing.
  5. Bake the cake according to the instructions on the box. Once baked, let it sit at room temperature for about 10 minutes.
  6. Use the handle end of a wooden spoon to poke holes all over the top of the cake, spacing them about an inch apart. Allow the cake to cool completely.
  7. In a bowl, combine the white chocolate pudding mix and milk, whisking until the pudding is dissolved. Before the pudding sets completely, pour it over the cooled cake, filling all the holes. Spread the remaining pudding on top and refrigerate until fully set.
  8. Once the pudding is set and the cake is completely cooled, prepare the whipped cream. Mix chilled heavy cream and vanilla extract until soft peaks form. Add powdered sugar and continue mixing until stiff peaks form. Spread the whipped cream over the pudding layer.
  9. Garnish with sprinkles before serving. Store in the fridge.

Notes

Serving:

  • Presentation: When serving the Easter Poke Cake, cut it into generous squares to showcase its colorful layers. Ensure each serving includes a good portion of the creamy pudding and whipped cream topping.
  • Garnish: Sprinkle additional colorful sprinkles or edible flowers on top just before serving for an extra festive touch.
  • Accompaniments: Serve each slice with fresh berries or a dollop of fruit compote on the side to complement the cake’s sweetness.

Storage:

  • Refrigeration: Due to its creamy layers, store the Easter Poke Cake in the refrigerator. Cover it loosely with plastic wrap or place it in an airtight container to prevent the whipped cream from drying out.
  • Duration: The cake can be stored in the fridge for up to 3-4 days. Ensure it’s kept away from strong-smelling foods to maintain its flavors.
  • Freezing: While possible, freezing isn’t recommended as it can affect the texture of the whipped cream and pudding layers.
