Description

Divinity is a timeless Southern candy that embodies the warmth and sweetness of the holiday season. This light, fluffy confection is made from whipped egg whites, sugar, and corn syrup, resulting in a soft, melt-in-your-mouth texture. It’s the perfect treat to make during Christmas or for gifting to friends and family. While it may look elegant and delicate, making divinity is quite simple with the right technique and a bit of patience.


Ingredients

  • 3 cups granulated sugar
  • ½ cup water
  • ½ cup light corn syrup
  • 2 large egg whites, room temperature
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans


Instructions

  1. Line two cookie sheets with parchment paper and set aside.
  2. In a large saucepan over medium heat, combine sugar, water, corn syrup, and salt. Stir constantly until the sugar dissolves and the mixture begins to boil.
  3. Continue to cook without stirring until the syrup reaches 265°F on a candy thermometer, about 5–8 minutes.
  4. While the syrup cooks, beat the egg whites in a stand mixer using the paddle attachment until stiff peaks form.
  5. Once the syrup reaches temperature, remove it from the heat and slowly pour it into the egg whites while whipping continuously. Pour gradually over 2–3 minutes to avoid deflating the whites.
  6. Check the mixture’s consistency by placing a small spoonful on the prepared baking sheet. If it holds its shape, it’s ready; if it spreads, continue mixing for another minute.
  7. When the candy reaches the right consistency, quickly stir in the vanilla extract and chopped pecans.
  8. Working quickly, use two spoons to drop tablespoon-sized mounds of candy onto the parchment paper.
  9. Let the divinity cool completely and set for 1–2 hours before serving.

Notes

Divinity is a delicate candy that needs proper care to maintain its soft, fluffy texture. Once the divinity has cooled completely, store it in an airtight container at room temperature. Place layers of wax or parchment paper between each piece to prevent sticking. Avoid refrigerating or freezing, as moisture will cause the candy to become sticky and lose its shape. Keep it in a cool, dry place for up to two weeks. When gifting, place divinity pieces in small candy boxes or tins lined with parchment for a beautiful presentation.
