Crispy Avocado Egg Rolls

  • Author: Lusine Svetlana

Description

If you love the famous Avocado Egg Rolls from the Cheesecake Factory, you’re going to adore this homemade version. These Avocado Egg Rolls with Sweet and Spicy Dipping Sauce are crispy on the outside, creamy on the inside, and packed with flavor — but they’re air-fried or baked instead of deep-fried, making them a lighter, healthier option. Perfect as an appetizer, snack, or party favorite, they’re ready in just 30 minutes!

Ingredients

For the Egg Rolls:

  • 12 ounces (from 3 medium) Hass avocados, cubed
  • Juice from 12 small limes
  • ¼ cup chopped sundried tomatoes (packed in oil, drained)
  • ⅔ cup diced red onion
  • ⅓ cup chopped cilantro
  • 1 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 10 egg roll wrappers
  • Small bowl of water (for sealing)
  • Olive or canola oil spray

For the Dipping Sauce:

  • 2 tablespoons mayonnaise
  • 1 tablespoon sweet chili sauce
  • A few dashes of sriracha, plus more to taste

Instructions

Air Fryer Method:

  1. In a medium bowl, combine avocado, lime juice, sundried tomatoes, onion, cilantro, salt, and pepper. Gently toss to mix.
  2. Place one egg roll wrapper on a clean surface with the corners facing up and down like a diamond.
  3. Spoon about ¼ cup of the avocado mixture onto the bottom third of the wrapper.
  4. Dip your finger in water and run it along the edges of the wrapper.
  5. Fold the bottom corner over the filling, then fold the left and right corners toward the center, and roll tightly to seal.
  6. Repeat with the remaining wrappers and filling.
  7. Lightly spray all sides of the egg rolls with oil spray.
  8. Preheat the air fryer to 400°F. Cook in batches for 6 minutes, turning halfway through, until golden brown and crisp.
  9. Mix mayonnaise, sweet chili sauce, and sriracha in a small bowl to make the dipping sauce. Serve alongside the hot egg rolls.

Oven Method:

  1. Preheat the oven to 400°F and lightly spray a baking sheet with oil.
  2. Arrange the prepared egg rolls on the sheet and spray the tops with oil.
  3. Bake for 16–18 minutes, flipping halfway through, until crisp and golden.

Notes

Serve these Avocado Egg Rolls fresh and warm straight from the air fryer or oven for the crispiest texture. They pair perfectly with the sweet and spicy dipping sauce, which balances the creamy avocado filling beautifully. For a party or gathering, keep them warm in a low oven (around 200°F) until ready to serve.

If you have leftovers, let them cool completely before storing. Place them in an airtight container and refrigerate for up to 2 days. When reheating, use an air fryer or oven at 375°F for 3–5 minutes to bring back that crispy texture. Avoid microwaving, as it will make the wrappers soft and soggy. The dipping sauce can be made ahead and stored in the refrigerator for up to 3 days. Stir before serving.
