Ingredients
- 2 tablespoons butter
- 1 clove garlic, minced
- 1 pound boneless skinless chicken breasts, cut into cubes
- 1 teaspoon oregano
- 1 teaspoon Italian seasoning
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- ¼ cup sun-dried tomatoes, drained and chopped
- 3 cups baby spinach
- 8 oz penne pasta, uncooked
- 1 jar (15 oz) Alfredo sauce
- 2 cups boiling water
- 1½ cups mozzarella cheese
- Fresh basil or parsley, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a medium bowl, combine chicken, garlic, oregano, Italian seasoning, salt, and pepper. Toss to coat evenly.
- In a deep oven-safe skillet, melt butter over medium heat.
- Add the seasoned chicken and cook for 7–10 minutes until fully cooked.
- Turn off the heat and add sun-dried tomatoes, spinach, uncooked pasta, Alfredo sauce, and boiling water.
- Stir everything well to combine.
- Cover the skillet and bake in the oven for 30 minutes, or until pasta is tender.
- Remove from the oven and sprinkle mozzarella cheese evenly over the top.
- Return to the oven and bake uncovered for 5–10 more minutes, until the cheese is melted and bubbly.
- Garnish with chopped basil or parsley if desired and serve hot.
