Ingredients

  • 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
  • 1/2 cup confectioners’ sugar, plus more for dusting
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour, spooned and leveled
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 3/4 cup fresh lemon juice (from about 3 lemons)

Instructions

  1. Preheat the Oven and Prepare the Pan Preheat your oven to 350 degrees Fahrenheit. Butter an 8-inch square baking pan, then line the bottom with parchment paper, leaving an overhang on two sides. Butter the parchment paper as well.
  2. Make the Crust Using an electric mixer, beat together the butter, confectioners’ sugar, and salt until light and fluffy. Add the flour and mix on low speed just until combined. Press the dough evenly into the bottom of the prepared pan and 1/2 inch up the sides. Prick the dough all over with a fork. Bake for 15 to 20 minutes, or until the crust is lightly golden.
  3. Prepare the Filling In a large bowl, whisk together the egg yolks, sweetened condensed milk, and lemon juice until smooth. Pour this mixture over the hot crust in the pan. Return the pan to the oven and bake for 25 to 30 minutes, or until the filling is set.
  4. Cool and Serve Allow the bars to cool completely in the pan. Refrigerate until the filling is firm, about 2 hours or up to 3 days. Use the parchment paper overhang to lift the cake out of the pan and onto a cutting board. Cut into 16 squares and dust with additional confectioners’ sugar before serving.
