Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 stalk celery, finely chopped
  • 2 medium carrots, peeled and diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 9 ounces fresh cheese tortellini
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup heavy cream
  • ⅓ cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add onion, celery, and carrots; cook 5–6 minutes until softened.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a gentle simmer.
  5. Add shredded chicken, tortellini, thyme, salt, and pepper.
  6. Cook 5–7 minutes, until tortellini are tender.
  7. Stir in heavy cream and fresh parsley.
  8. Serve hot and enjoy immediately.

Notes

  • Serve with crusty bread, garlic knots, or a side salad
  • Garnish with extra parsley or grated Parmesan
  • Store leftovers in an airtight container for up to 3 days
  • Reheat gently on the stovetop; add a splash of broth if thickened
  • Not freezer-friendly due to cream and tortellini texture
