Creamy Burrito Casserole is a delicious and easy-to-make dish that combines all the flavors of a classic burrito in a comforting casserole form. With layers of seasoned ground beef, refried beans, gooey cheese, and a creamy sour cream mixture, this casserole is perfect for family dinners, gatherings, or meal prepping. Ingredients

  • 1 lb ground beef
  • 1/2 onion, chopped
  • 1 package taco seasoning
  • 6 large flour tortillas
  • 1 can refried beans
  • 23 cups shredded taco cheese or cheddar cheese
  • 1 can cream of mushroom soup
  • 4 ounces sour cream

Instructions

1. Brown the Beef and Onion

Begin by browning the ground beef and chopped onion in a skillet over medium heat. Once the beef is fully cooked and the onions are tender, drain the excess fat.

2. Add Taco Seasoning and Refried Beans

Stir in the package of taco seasoning, ensuring the beef and onions are evenly coated. Then, add the can of refried beans to the mixture, combining everything thoroughly.

3. Prepare the Sour Cream Mixture

In a separate bowl, mix together the can of cream of mushroom soup and 4 ounces of sour cream. Stir until smooth and well blended.

4. Assemble the Casserole

Spread half of the sour cream mixture evenly across the bottom of a casserole dish. Tear up three of the flour tortillas and layer them over the sour cream mixture. Next, spread half of the meat and bean mixture over the tortillas. Add a layer of shredded taco cheese or cheddar cheese.

5. Repeat the Layers

Repeat the layering process with the remaining ingredients. Start with tearing up the remaining three tortillas and laying them over the first set of layers. Then, spread the remaining meat and bean mixture over the tortillas. Top it off with another layer of shredded cheese.

6. Bake the Casserole

 

Preheat your oven to 350°F (175°C). Sprinkle additional shredded cheese over the top layer of the casserole. Bake the dish, uncovered, for 20-30 minutes or until the cheese is melted and bubbly.

  1. Garnish: Add a touch of freshness and extra flavor by garnishing your casserole with chopped fresh cilantro, diced tomatoes, or green onions.

Storage Tips

 

  1. Refrigeration: Allow the casserole to cool completely before storing. Transfer any leftovers into an airtight container and refrigerate. The casserole will stay fresh for up to 3-4 days.
  2. Freezing: If you plan to freeze the casserole, it’s best to do so before baking. Assemble the casserole as directed, then cover tightly with aluminum foil and plastic wrap. Label and freeze for up to 2 months. When ready to eat, thaw in the refrigerator overnight and bake as directed.
  3. Reheating: To reheat refrigerated leftovers, place a portion on a microwave-safe plate and microwave on high for 1-2 minutes, or until heated through. For larger quantities, cover the casserole dish with foil and reheat in a 350°F oven for 20-25 minutes or until warm.
