Ingredients

  • 12 ounces fresh cranberries
  • 1 ½ cups sugar, divided
  • 8-ounce can crushed pineapple, undrained
  • ½ cup walnuts
  • 2 cups mini marshmallows
  • 8 ounces cream cheese, softened
  • 2 cups heavy whipping cream


Instructions

  1. In a food processor or blender, combine the cranberries, 1 cup of sugar, crushed pineapple, and walnuts. Pulse until the mixture is coarsely chopped but not mushy. Cover and refrigerate for about an hour to let the flavors blend.
  2. In a separate bowl, beat the cream cheese with the remaining ½ cup of sugar until smooth. Add the heavy whipping cream and continue beating until stiff peaks form.
  3. Gently fold in the cranberry mixture and mini marshmallows until well combined.
