Ingredients

  • Nonstick cooking spray, for the pan
  • 1/3 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 2 apples (any kind), peeled and chopped
  • 2/3 cup plus 2 tablespoons granulated sugar
  • 1/2 cup (1 stick) butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup plus 1 to 3 tablespoons milk or almond milk
  • 1/2 cup powdered sugar

Instructions

Step 1: Preheat and Prepare the Pan
Begin by preheating your oven to 350°F (175°C). Spray a 9-by-5-inch loaf pan with nonstick cooking spray or line it with foil and spray it for easy removal after baking.

Step 2: Prepare the Cinnamon-Sugar Mixture
In a small bowl, mix the brown sugar and 1 teaspoon of cinnamon together. Set this mixture aside for later use.

Step 3: Toss the Apples
In a separate bowl, toss the chopped apples with 2 tablespoons of granulated sugar and the remaining 1 teaspoon of cinnamon. Set this mixture aside as well.

Step 4: Cream Butter and Sugar
In a medium bowl, beat the softened butter and remaining 2/3 cup of granulated sugar together using an electric mixer. Beat for about 5 minutes until smooth and creamy. Once blended, add in the eggs one at a time, followed by the vanilla extract.

Step 5: Combine Dry Ingredients
In another bowl, whisk together the all-purpose flour and baking powder. Gradually add this dry mixture into the butter mixture and beat until well combined. Then, mix in 1/2 cup of milk until the batter becomes smooth.

Step 6: Layer the Batter
Pour half of the batter into the prepared loaf pan. Top with half of the apple mixture and half of the brown sugar/cinnamon mixture. Repeat this process by pouring the remaining batter over the apple layer, then topping it with the remaining apples and cinnamon mixture.

Step 7: Swirl the Mixture
Lightly pat the apples into the batter. Using a knife or spoon, swirl the brown sugar mixture through the apples for that signature apple fritter look.

Step 8: Bake the Bread
Bake the bread in the preheated oven for about 1 hour and 10 minutes. To check for doneness, insert a toothpick into the center of the loaf. If it comes out clean, the bread is ready.

Step 9: Make the Glaze
In a small bowl, whisk together the powdered sugar and 1 to 3 tablespoons of milk, depending on how thick or thin you want the glaze.

Step 10: Drizzle and Serve
Allow the bread to cool for about 15 minutes before drizzling the glaze over the top. Let the glaze set before serving for the perfect finish.
