Ingredients

For the Crust:

  • 2 cups cinnamon graham crackers, finely crushed
  • ⅓ cup butter, melted
  • ¼ cup brown sugar

For the Cheesecake:

  • 2 (8 oz) packages cream cheese, room temperature
  • ⅔ cup sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • ½ cup sour cream

For the Cinnamon Swirl:

  • 1 cup brown sugar
  • ¼ cup all-purpose flour
  • 23 tablespoons ground cinnamon (adjust for desired flavor)
  • 6 tablespoons butter

Instructions

Step 1: Prepare the Crust
Preheat your oven to 325°F. Line an 8×8-inch baking pan with foil, ensuring the sides extend over the edges for easy removal. Spray with cooking spray. In a medium bowl, mix the crushed cinnamon graham crackers, melted butter, and brown sugar until fully combined. Press the mixture evenly into the bottom of the pan and bake for 10-12 minutes until golden. Remove from the oven but keep the oven on.

Step 2: Make the Cheesecake Filling
In a stand mixer, beat the cream cheese and sugar until light and fluffy, about 1 minute. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until smooth. Set aside.

Step 3: Create the Cinnamon Swirl
In a saucepan over medium heat, melt the brown sugar, flour, cinnamon, and butter, stirring until smooth. Remove from heat.

Step 4: Assemble the Bars
Spread half of the cheesecake mixture over the baked crust. Drizzle half of the cinnamon swirl mixture over the top and use a butter knife to swirl it into the cheesecake. Repeat with the remaining cheesecake filling and cinnamon mixture, creating a marbled effect.

Step 5: Bake and Chill
Bake for 35-40 minutes or until the cheesecake is set and the center is slightly jiggly. Allow the bars to cool completely at room temperature, then refrigerate for at least 2 hours before slicing and serving.
