Ingredients

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 small onion, diced

  • 1 cup cooked chicken breasts, diced
  • ½ cup shredded carrots

  • ½ tsp dried thyme
  • Salt and pepper to taste
  • 1 (16 oz) package gnocchi

Instructions

  1. Heat butter and olive oil in a large pot over medium-high heat. Add diced onion, chopped celery, and minced garlic. Saute until the onion turns soft and translucent.
  2. Sprinkle flour over the sauteed vegetables and stir well to combine. Cook for 1 minute to eliminate the raw flour taste.
  3. Slowly pour in fat-free evaporated milk or half and half, stirring constantly to ensure a smooth consistency without lumps.
