  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1½ cups shredded mozzarella or cheddar cheese
  • 2 tbsp cooking oil
  • 1 tsp paprika
  • 1 tsp curry powder
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp chili powder
  • 1 seasoning cube
  • Salt to taste

For Wrapping and Frying

  • 8–10 medium flour tortillas
  • 1–1½ litres vegetable oil for deep frying

Instructions

  • Heat 2 tablespoons of cooking oil in a large pan over medium heat.
  • Add the diced onion and minced garlic and sauté for 1–2 minutes until fragrant.
  • Add the chicken pieces, paprika, curry powder, black pepper, oregano, chili powder, seasoning cube, and salt.
  • Cook until the chicken is completely cooked through and lightly browned.
  • Add the green and red bell peppers and cook for another 2–3 minutes. Keep the peppers slightly crunchy for better texture.
  • Reduce the heat and stir in the shredded mozzarella or cheddar cheese.
  • Continue stirring until the cheese melts and coats the chicken mixture.
  • Remove the filling from the heat and let it cool slightly.
  • Place a generous amount of filling in the center of each flour tortilla.
  • Fold the sides inward, then tightly roll each tortilla into a sealed rectangular packet.
  • Place each chimichanga seam-side down while preparing the remaining tortillas.
  • Heat the vegetable oil to about 175°C.
  • Carefully place the chimichangas into the hot oil, seam-side down first.
  • Fry until golden brown and crispy, turning carefully so they brown evenly.
  • Remove from the oil and drain on paper towels or a wire rack.
  • Let them cool for a few minutes and serve while the filling is hot and the cheese is melted and stretchy.

Serving and Storage Tips

  • Serve hot with salsa, sour cream, guacamole, ranch dressing, or your favorite dipping sauce.
  • Add shredded lettuce, diced tomatoes, or fresh cilantro on the side for a fresh contrast.
  • For a party, cut the chimichangas in half and serve them with several dipping sauces.
  • Store leftover chimichangas in an airtight container in the refrigerator for up to 3 days.
  • Reheat them in an oven or air fryer to bring back their crispiness. Avoid microwaving if possible because the tortillas can become soft.
  • To freeze, let the cooked chimichangas cool completely, wrap them individually, and place them in a freezer-safe container for up to 2–3 months.
  • Reheat frozen chimichangas in the oven or air fryer until heated through and crispy.

Variations

1. Spicy Chicken Chimichangas
Add diced jalapeños, extra chili powder, or a pinch of cayenne pepper to the filling for a hotter version. Pepper Jack cheese also works especially well.

2. Chicken and Cream Cheese Chimichangas
Replace part of the shredded cheese with softened cream cheese. The result is an extra creamy filling that pairs beautifully with seasoned chicken.

3. Cheesy Chicken Ranch Chimichangas
Add 1–2 tablespoons of ranch seasoning to the chicken mixture and use cheddar cheese. Serve with ranch dressing for dipping.

4. Mexican-Style Chimichangas
Season the chicken with cumin, chili powder, paprika, garlic, and oregano. Add black beans and corn for a hearty Mexican-inspired filling.

5. Chicken and Bean Chimichangas
Mix cooked black beans or pinto beans into the chicken filling. The beans add extra texture and make the chimichangas more filling.

6. Chicken Fajita Chimichangas
Use sliced chicken with onions and colorful bell peppers. Season with fajita seasoning and add shredded Monterey Jack or cheddar cheese.

7. BBQ Chicken Chimichangas
Mix shredded cooked chicken with your favorite barbecue sauce and cheddar cheese. Add a little diced red onion for extra flavor.

8. Buffalo Chicken Chimichangas
Combine cooked chicken with buffalo sauce and cream cheese, then add shredded mozzarella. Serve with ranch or blue cheese dressing.

9. Chicken and Corn Chimichangas
Add sweet corn to the chicken and pepper filling. Cheddar cheese and a little chili powder create a delicious sweet and savory combination.

10. Garlic Parmesan Chicken Chimichangas
Use cooked chicken seasoned with garlic, black pepper, and Italian herbs. Add mozzarella and Parmesan cheese for a rich, savory filling.

11. Loaded Chicken Chimichangas
Add cooked black beans, corn, diced tomatoes, jalapeños, and extra cheese to create a generously stuffed chimichanga.

12. Breakfast Chicken Chimichangas
Add scrambled eggs, cooked chicken, cheese, and diced bell peppers to the tortillas. Serve with salsa for a hearty breakfast.

13. Baked Chicken Chimichangas
Instead of deep-frying, brush the filled tortillas lightly with oil and bake at 200°C until crisp and golden, turning halfway through cooking.

14. Air Fryer Chicken Chimichangas
Lightly spray the assembled chimichangas with cooking oil and air fry at about 190°C until golden and crispy, turning halfway through.

15. Beef and Chicken Chimichangas
Replace half of the chicken with cooked seasoned ground beef. Add plenty of cheddar or Mexican-style cheese for a hearty combination.

FAQs

1. What are chimichangas?
Chimichangas are flour tortillas filled with ingredients such as seasoned meat, beans, vegetables, and cheese. They are typically folded into packets and fried until crispy.

2. Can I use cooked chicken?
Yes. Shredded rotisserie chicken or leftover cooked chicken can be used. Simply season it with the spices and cook it with the vegetables before adding the cheese.

3. Which cheese is best for chicken chimichangas?
Mozzarella, cheddar, Monterey Jack, Pepper Jack, or a Mexican cheese blend all work well. You can also combine two types of cheese.

4. How do I stop the chimichangas from opening while frying?
Fold the sides tightly and roll the tortilla firmly. Place each chimichanga seam-side down in the hot oil first to help seal it.

5. Can I make chimichangas without deep frying?
Yes. They can be baked or cooked in an air fryer for a lighter option while still achieving a crispy exterior.

6. Can I prepare them ahead of time?
Yes. Assemble the chimichangas several hours ahead and keep them covered in the refrigerator until you’re ready to cook them.

7. Why did my tortillas tear?
Cold or dry tortillas are more likely to crack. Warm them briefly before filling so they become flexible and easier to fold.

8. Can I freeze chicken chimichangas?
Yes. Allow them to cool completely, wrap them individually, and freeze them in an airtight freezer-safe container or bag.

9. What can I serve with chimichangas?
Salsa, guacamole, sour cream, ranch dressing, Mexican rice, refried beans, salad, or corn are all great options.

10. How do I reheat leftover chimichangas?
Reheat them in an oven or air fryer until hot and crispy. This works better than microwaving because it helps restore the crisp tortilla.
