Cherry Cheesecake Pie

  • Author: Lusine Svetlana

Description

Cherry Cheesecake Pie is the perfect blend of creamy, crunchy, and fruity—all in one easy, no-bake dessert. With a rich Oreo crust, a velvety cheesecake filling, and a luscious cherry topping, this pie comes together quickly and is ideal for holidays, potlucks, or anytime you’re craving something sweet but don’t want to turn on the oven. Let’s dive into the details of this irresistibly simple dessert.

Ingredients

For the crust:
2 ½ cups Oreo cookie crumbs (about 26 Oreo cookies)
6 tablespoons unsalted butter, melted

For the cheesecake filling:
8 ounces cream cheese, room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
8 ounces Cool Whip

For the topping:
1 (20 ounce) can cherry pie filling

Instructions

Prepare the crust:
Use a food processor to finely crush Oreo cookies, then add the melted butter and blend until moistened. Press the mixture firmly into the bottom and up the sides of a lightly greased 9-inch springform pan. Use a spoon to level the edges neatly. Place the crust in the freezer to set while you prepare the filling.

Make the cheesecake filling:
In a large mixing bowl, beat the cream cheese and powdered sugar using an electric mixer until smooth and creamy. Add the vanilla extract and Cool Whip, then mix at low speed until everything is well combined.

Assemble the pie:
Spread the cheesecake filling evenly into the chilled crust. Spoon the cherry pie filling on top and spread gently to cover the entire surface. Chill the pie in the refrigerator for at least one hour or until fully set before serving.

Notes

Serve the Cherry Cheesecake Pie chilled for the best texture and flavor. To get clean, neat slices, use a sharp knife and wipe it off between each cut. This dessert is ideal for making ahead of time since chilling helps it set perfectly.

Store any leftovers covered tightly in the refrigerator for up to 4 days. Avoid freezing, as the texture of the cream cheese filling and whipped topping can become compromised after thawing. When ready to enjoy again, allow the pie to come to serving temperature straight from the fridge for the best taste.
