Cheesy Zucchini Rice is a simple, cheesy, and delicious side dish that sneaks in vegetables in a way even picky eaters will love. Ingredients

  • 2 cups chicken broth
  • 1 cup long-grain white rice
  • 2 tablespoons butter
  • 2 medium zucchini, grated (about 2 cups)
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring the chicken broth to a boil.
  2. Stir in the rice, cover, reduce heat to low, and cook for about 20 minutes or until the liquid is absorbed.
  3. Remove from heat and add the butter, zucchini, and shredded cheddar cheese.
  4. Stir until the butter and cheese melt and are fully combined, then let stand for 5 minutes.
  5. Season with salt and pepper to taste and serve warm.
