Description

Cheesy Corn Dip is a warm, creamy, and ultra-comforting appetizer made with sweet corn, melted cheese, cream cheese, sour cream, and a mild kick of jalapeño. It is quick to prepare, perfect for gatherings, parties, game nights, or simple snacking. The dip becomes rich, bubbly, and golden as it bakes or slow cooks, making it a crowd favorite served with chips, crackers, or bread.


Ingredients

  • 3 cups corn kernels
  • 1 1/2 cups cheddar cheese, shredded
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 jalapeño, finely chopped (remove seeds for less heat)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Instructions

  1. In a large mixing bowl, combine corn, cheddar cheese, cream cheese, sour cream, jalapeño, onion powder, and garlic powder
  2. Mix well until everything is evenly blended and creamy
  3. Transfer the mixture into a crock pot or baking dish
  4. For crock pot: cook on low for about 4 hours until hot and melted
  5. For oven: bake at 350°F (175°C) for about 30 minutes or until bubbly and lightly golden
  6. Stir before serving if needed and serve warm

Notes

  • Serve hot for best texture and flavor
  • Pair with tortilla chips, pita chips, crackers, or toasted baguette slices
  • Add a sprinkle of fresh herbs like parsley or green onions for freshness
  • Serve as a party dip, side dish, or game-day snack
  • Best served straight from the oven or slow cooker to keep it creamy
  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days
  • Reheat in the microwave in short intervals, stirring in between
  • You can also reheat in the oven at low temperature until warmed through
  • Add a splash of sour cream or milk when reheating if it becomes too thick
  • Not recommended for freezing as texture may change
